Raspberry Pop Tarts
- 2 cups flour
- 1 tsp salt
- 1 tsp granulated/caster sugar
- 1 cup unsalted butter, cold and diced into cubes
- 4 - 5 tbsp ice water
- 3/4 cup strawberry preserves, divided (or other preserve of choice)
For the Icing:
- 1 cup icing sugar (powdered sugar)
- 2 tbsp milk
- 1/4 tsp vanilla extract
- Colouring if desired
Step One: Combine flour, salt, and granulated sugar in a food processor. If you don't have one you can also do this by hand. Pulse ingredients together.
Step Two: Add butter into flour mixture. Make sure butter is diced into cubes. You can also do this by hand until it resembles a course cornmeal-like texture. Once blended, add four tbsp of water and pulse the dough until it starts to form a ball. Drop mixture onto a clean surface and knead the dough to make sure it is totally combined. Split into two disks, cover with cellophane and chill in the fridge for an hour.
Step Three: Line two baking sheets with butter and then parchment paper. Working with 1 dough ball at a time, roll dough out onto a floured surface to about 13 by 11-inch rectangle, Then cut out roughly 4 5 by 3-inch rectangles.
Step Four: Arrange the 4 of the rectangles, spaced evenly apart on prepared baking sheet. Spread 1 1/2-2 tbsp of jam evenly down the center of each rectangle, leaving some rim on all sides to seal the edges.
Step Five: Roll out the second dough ball and make four more rectangles or the tops. Using a fork make indentations to seal the two sides and jam inside. This will help keep the jam from seeping out during baking. Poke the top center of each tart eight or nine times with a toothpick/skewer.
Step Six: Bake the pop tarts until golden, rotating racks once halfway through baking if you don't have a fan oven, about 25 - 30 minutes. Let pop tarts cool on baking sheet several minutes then transfer to a wire rack to cool completely. If some of the jam leaks out be careful as it can be hot and let it cool completely before handling.
Icing: In a small bowl whisk together all icing ingredients. Using a spoon pour over the pop tarts and then add desired sprinkles! You can leave the icing white or use some fun colors if you want.
